It is commonly employed as a set retarder and chelating admixture in concrete construction, extending workable time in hot-weather concreting and helping control hydration rate. Additionally, it serves as a metal cleaning and passivation agent in metal finishing operations, effectively removing scale and oxide layers without the corrosivity of stronger mineral acids. Gluconic acid is also utilized in food processing as an acidulant and sequestrant that helps stabilize color and flavor. Furthermore, it finds applications in general cleaning product formulations requiring a biodegradable chelating acid.
